Tuna Spring Rolls

All the deliciousness of a fresh tuna salad wrapped up in a thin paper rice and served with a lightly spicy soya dipping sauce. Turn plain canned tuna into something exotic and delicious with this recipe

Ingredients for 2 persons (4 large rolls)

  • 4 rice paper
  • 120 g of plain tuna, in water, canned (drained weight)
  • 1 avocado
  • 1 tablespoon of lemon juice
  • 2 eggs
  • 50 g of arugula

For the dipping sauce:

  • 3 tablespoons of soy sauce
  • 1 tablespoon of drinking water
  • Dose according to your convenience: chili powder, dried garlic and ground ginger

Directions

Step 1: cook the hard-boiled eggs

Boil water and immerse the eggs in it. Cook 10 minutes from boiling.

At the end of cooking, quickly pass the eggs under cold water to remove the shell more easily.

Swab the eggs. Let cool.

Step 2:

Rinse the arugula with water, then remove all the excess water.

Step 3:

Peel the avocado and remove the seed. Cut the flesh into strips.

Pour the lemon juice over the avocado pieces. Mix. The lemon will prevent the avocado from turning black.

Step 4:

Drain and crumble the tuna.

In a bowl, mix together the crumbled tuna and the cooled hard-boiled eggs.

Step 5: the spring rolls preparation

Put a rice paper in cold water for a few seconds to soften it, then place it on a clean board.

Put in the middle of the rice paper:

– ¼ of arugula leaves

– ¼ of the tuna-egg mixture

– ¼ of avocado pieces

Close the rice paper on itself by folding the edges inward to enclose the ingredients. Place the roll on a plate.

Repeat step 5 to make the other rolls. Take care to separate the rollers well, during storage, to prevent them from sticking to each other. If you plan to take them for a picnic, wrap the rolls individually in plastic wrap.

Keep the rolls cool until serving.

Step 6: Prepare the dipping sauce

In a bowl, combine all the ingredients.

Divide the sauce in small containers so that each guest can soak these spring rolls at the time of eating. Keep the sauce cool until serving.

Step 7: it’s time to eat your delicious rolls!

Serve chilled spring rolls with their lightly spicy soya dipping sauce.
