Vegetables and chicken stir fry with rice noodles

With its slightly sweet sauce, this complete and balanced dish will please all the family!

Ingredients for 2 persons

  • 200 g of boneless and skinless chicken breast
  • 100 g of rice noodles
  • 400 g of vegetables: 1 carrot, 1 onion, 1 green bell pepper and 100 g of mushrooms
  • 2 tablespoons of olive oil

For the chicken marinade:

  • 1 tablespoon of soy sauce
  • 1 tablespoon of corn flour (or Maïzena)

For the sauce:

  • 1 tablespoon of corn flour (or Maïzena)
  • 150 ml of water
  • 50 ml of soy sauce
  • 20 g of ketchup (or fine sugar)

Directions

Step 1:

Cut the chicken into strips.

In a bowl, mix chicken pieces with marinade ingredients (1 tablespoon soy sauce + 1 tablespoon corn flour).

Cover with a plastic wrap and refrigerate during the time to prepare other ingredients.

Step 2:

Clean and cut vegetables:

  • Bell pepper, mushrooms and onion in thin strips
  • The carrot in thin strips using a peeler

Step 3:

Boil a pan of water.

Off the heat, put the noodles in boiling water. Rice noodles is very fragile, handle with care if you do not want to break it into small pieces.

Do not put the pan back on the fire! Soak the noodles for 7 to 10 minutes, stirring regularly and gently to help them separate. The noodles are cooked when it is completely soft.

Drain the noodles and set aside.

Step 4:

In a bowl, mix all the ingredients of the sauce: first dilute the corn flour (1 tablespoon) with 150 ml of water, then add the soy sauce (50 ml) and the ketchup (20 g). Set aside.

Step 5:

In a frying pan or wok, heat 2 tablespoons of olive oil and brown the pieces of chicken. Continue cooking until all pieces of chicken are golden brown.

Step 6:

Add the onions. Mix and continue cooking for 2 minutes.

Repeat the same operation with the other vegetables adding them one-by-one: the carrot, the bell pepper and to finish the mushrooms.

Step 7:

Reduce the power of the fire (3/10) and add the sauce made in step 4. Mix.

Continue cooking on low heat for 5 to 10 minutes, the sauce will thicken.

It’s up to you now to adjust the amount and seasoning of your sauce: add water and/or soy sauce to your taste.

Step 8:

Just before serving, add noodles and mix with chicken and vegetables. Serve hot.
