Another way to eat cooked carrots…
Ingredients for 1 person
- 300 g of carrots (gross weight)
- 2 eggs
For the seasoning:
- 1 tablespoon of sunflower oil
- 1 tablespoon of water
- 1 teaspoon of balsamic vinegar
- To measure to your taste: salt, pepper, chopped fresh parsley
Peel the carrots, then wash them with water.
Cut the carrots into slices.
Step 2: carrots cooking
Boil a pan of water.
Salt the boiling water, pour in the carrots and cover.
Cook covered for 5 minutes after boiling time.
Drain the carrots at the end of cooking.
Step 3: eggs cooking
Boil water and immerse the eggs in it. Cook 10 minutes from boiling.
At the end of cooking, quickly pass the eggs under cold water to remove the shell more easily.
Swab the eggs, then cut into small pieces.
In a salad bowl, combine the cooked carrots and eggs.
In a small bowl, mix all the seasoning ingredients.
Pour over the carrots and egg.
Mix well. Adjust the seasoning in salt and pepper.
Keep the salad cool in the fridge until serving.
