To differ from meat, here’s an egg recipe! This recipe idea is popular in India: hard-boiled eggs served in a delicately scented tomato sauce.

Ingredients for 2 persons
• 4 eggs
• 200 g of fresh tomato dices
• 200 g of plain tomato sauce
• 1 small fresh onion (50 g)
• 1 small pepper
• 1 teaspoon of dried garlic
• 1 teaspoon of ground ginger
• 1 teaspoon of salt
• 1 teaspoon of turmeric
• 1 teaspoon of paprika
• 1 teaspoon of garam masala
• 2 tablespoons of olive oil
• 100 ml of water
Directions
Step 1: cook the hard-boiled eggs
Boil water and immerse the eggs in it. Cook 10 minutes from boiling.
At the end of cooking, quickly pass the eggs under cold water to remove the shell more easily.
Swab the eggs.
Step 2:
In a frying pan, heat a tablespoon of olive oil and grill the eggs.

Stop cooking when the eggs are lightly broiled on all sides. Put the eggs on a plate. Set aside.
Step 3:
Peel and coarsely chop the onion.
Cut the chili into pieces.
Blend the onion, chili, garlic, ginger and salt together until it forms a paste.
Step 4:
In the pan used for eggs (step 2), heat a tablespoon of olive oil and gently brown the paste made in the previous step (medium heat 5/10).

When the paste starts to brown, add the fresh diced tomatoes, the tomato sauce and the remaining spices (1 teaspoon of turmeric, 1 teaspoon of paprika, 1 teaspoon of garam masala) and water.
Mix.
Put a lid on the pan and cook over medium heat (5/10) for 10 minutes.
Step 5:
After 10 minutes of cooking: put the grilled hard-boiled eggs in the pan with the spicy tomato sauce.
Mix. Adjust the salt seasoning.
Continue cooking for 5 minutes until you have a uniform temperature of your dish.
Serve hot.
