Asparagus and Ham Quiche

A creamy quiche filled with good stuff: fresh green asparagus, ham and grilled cheese.

Ingredients for 4 persons

  • 1 home-made shortcrust pastry (link to my recipe of shortcrust pastry) or 1 ready-to-use dough
  • 600 g of fresh green asparagus (gross weight) which will give you around 300 g of peeled asparagus. You can also use canned green asparagus (1 can = about 300 g drained weight)
  • 1 teaspoon of olive oil
  • 200 g of ham
  • 2 eggs
  • 200 ml of semi-skimmed milk (low fat, 2%)
  • 40 g of grated cheese (Emmental or Swiss cheese for example)
  • Salt, pepper

Directions

Preheat oven to 180 ° C / 375 ° F.

Step 1:

Break the ends where the asparagus bend naturally.

Peel, being careful not to damage the head of the asparagus

Cut into pieces the size of the asparagus head.

Step 2:

In a frying pan, heat the oil and fry the asparagus for 5 minutes over high heat, stirring regularly. At the end of cooking, separate the asparagus heads and the other pieces of asparagus. Set aside.

Step 3:

Cut the ham into small pieces. Set aside.

Step 4:

In a mixing bowl, break the eggs, beat them with a fork, then add the milk.

Add the ham pieces and the cooked asparagus (without the heads). Salt and pepper. Mix.

Step 5:

Spread the shortcrust pastry into a 28-30 cm diameter pie mould. Poke the dough with a fork.

Pour the mixture, made in step 4, into the mould.

Sprinkle the grated cheese on the quiche.

At the end, put the asparagus heads on the cheese.

Step 6:

Bake at 180 ° C / 375 ° F for 35-45 minutes. Stop cooking when the quiche is golden brown.

Serve hot or cold.
