Fresh fruit puree

To be consumed alone, as an accompaniment to a yoghurt, to spread on bread …

Ingredients for 1 portion of « fruit » for 1 person

  • 250 g of ripe fresh red fruits (strawberries, raspberries, blackberries or blueberries)
  • A few drops of lemon
  • Sweetener or sugar (maximum 1 teaspoon) if necessary

Directions to make a strawberry puree

Step 1:

Wash quickly, hull and wipe strawberries with a cloth. Cut the strawberries in half.

Step 2:

Put the strawberries in a saucepan. Sprinkle with a few drops of lemon and mix. The lemon juice will prevent the fruit puree from turning brown if stored for several days.

Put a lid on the pan and cook on low heat (power 3/10) for 5 minutes.

The purpose of this light cooking is to accentuate the taste of the fruit and soften the flesh of the fruit.

Step 3:

Crush the fruit in the pan with a fork or wooden spoon. If the fruits do not bring enough juice and they stick in the pan, add a few drops of water.

Put the lid on the pan and continue cooking for 5 minutes.

Step 4:

After 5 + 5 minutes of cooking, remove the saucepan from the heat. Crush the fruits coarsely with a fork (or in a blender to obtain a fine puree).

Step 5:

Let it cool.

Just before serving, taste the puree. If the puree is not sweet enough to your taste, add sweetener or sugar and mix.

This puree can be preserved for 1 week in the refrigerator in a closed container so several portions can be prepared at the same time.
