Chickpea patties

Beautiful crunchy and golden patties on the outside, soft and delicately scented on the inside… 

Ingredients for 2 persons

  • 400 g of cooked chickpeas (canned)
  • 3 eggs
  • 100 g of plain yoghurt
  • 60 g of natural cornflakes
  • ½ teaspoon of cumin powder
  • 1 teaspoon of onion powder
  • ½ teaspoon of salt
  • 1 teaspoon of paprika
  • 2 tablespoons of fresh parsley
  • 2 tablespoons of fresh coriander

For the cooking: 2 tablespoons of olive oil.

Directions

Step 1:

Drain the chickpeas and rinse with water.

Do not dispose of the juice from the chickpeas can!!! It is not useful for this recipe, but it can be useful you for other recipes! Surprising as it may seem, this juice can replace egg whites in recipes … discover my recipe of 100% vegan chocolate mousse – click on this link

Step 2:

Put in a mixer: chickpeas, eggs and yoghurt.

Mix to obtain a puree.

Step 3:

Then add all the other ingredients to the mixer: cumin, corn flakes, onion, salt, paprika, parsley and coriander.

Mix a few seconds to obtain an homogeneous dough.

Step 4:

Put the preparation in the refrigerator for 30 minutes: during this rest period, the dough will firm up and it will be easier to form the patties in the next step.

Step 5:

On medium heat (5/10), heat the oil in a large pan. Then, using a tablespoon, put in piles of dough. You will be able to do 8 to 10 patties.

Grill the first side for 2 minutes, then turn the patties and crush them with the back of a spoon to form flat patties.

Once all patties are flipped and flattened, place a lid on your pan and continue cooking for 5 minutes.

Stop cooking and serve patties when they are all golden brown.

You choose the moment to taste them … These patties are as good hot as cold!
