Quiche gluten-free without dough «chicken – tomato»

Quick and easy solution to prepare a homemade salty pie in minutes without a headache…

Ingredients for 4 persons

  • 200 g of chicken breast
  • 1 fresh tomato
  • 4 eggs
  • 200 ml of semi-skimmed milk (low-fat)
  • 100 g of corn flour or Maïzena  
  • 60 g of grated cheese (Emmental, Swiss cheese…)
  • Salt, pepper
  • ½ teaspoon of dried basil
  • 2 tablespoons of olive oil

Directions

Preheat the oven to 180 °C / 400 °F

Step 1:

Cut the chicken into small cubes.

Step 2:

In a frying pan, heat 1 tablespoon of olive oil and fry the chicken dice.

During cooking, add basil and salt. Continue cooking by stirring the chicken regularly.

Stop cooking when all chicken pieces are golden brown. Set aside.

Step 3:

Wash the tomato. Remove the hard part in the pith of the peduncle of the tomato. It is in the part where most pesticide residues are stored. By removing this part, you eliminate a lot of these unwanted products.

Cut the tomato in half, then slice. Set aside.

Step 4:

In a salad bowl, break the eggs and beat them in omelette.

Add the milk and mix.

Add the corn flour: pour the flour, spoon per spoon, while mixing with a whisk to avoid the formation of lumps and obtain a homogeneous mixture.

Add the chicken dices, then salt and pepper the preparation.

Step 5:

Place 1 tablespoon of olive oil in a pie plate (diameter 25-28 cm) and spread with a paper towel.

Put your preparation into the mold.

Spread tomato slices over the mixture.

To finish, spread the grated cheese over the mixture.

Step 6:

Bake for 30 minutes at 180° C /400 °F.

Step 7:

Serve hot from the oven … Accompanied by seasonal vegetables in salad, this quiche without dough is a balanced meal.
