Turkey stir-fry with snow peas and bell pepper

A quick and easy pan-fried turkey and vegetables. With its slightly sweet and tender taste, the snow pea is an ideal vegetable for children. This recipe may become one of your family’s favorites!

Ingredients for 2 persons

  • 250 g of turkey breast (boneless, skinless)
  • 200 g of snow peas (also called mange-tout peas)
  • 1 red bell pepper
  • 1 onion
  • 1 tablespoon of olive oil
  • 4 tablespoons of soy sauce

For the turkey marinade:

  • 1 tablespoon of soy sauce
  • 1 tablespoon of corn flour (corn starch)

Directions

Step 1:

Cut the turkey into large dices.

In a bowl, mix the turkey pieces with the ingredients for the marinade (1 tablespoon soy sauce + 1 tablespoon corn flour).

Cover with a plastic wrap and refrigerate during the time to prepare other ingredients.

Step 2:

Clean and cut vegetables (snow peas, bell pepper, onion) into rectangles.

Step 3:

In a frying pan, heat the olive oil and brown the onion for 2 minutes.

Add the turkey pieces. Continue cooking over high heat (8/10) for 5 minutes, stirring regularly.

Step 4:

When all of the turkey pieces are golden brown, add bell pepper, snow peas and soy sauce. Mix, then lower the firepower (6/10) and put a lid on your pan.

Step 5:

Continue cooking over medium heat, stirring regularly. Adjust the cooking time according to your preference: 15 minutes for crunchy vegetables or 20 minutes for more tender vegetables.

During the last minutes of cooking, adjust the amount of sauce and the seasoning of your dish: add water and / or soy sauce to your taste.

Serve hot.
