This recipe is surprisingly easy and very tasty…. One good idea for a weekday dinner!

Ingredients for 2 persons
- 200 g of frozen cooked shrimps
- 100 g of rice noodles
- 3 bell peppers (green, orange and red)
- 2 tablespoons of olive oil
For the sauce:
- 1 tablespoon of corn flour (or corn starch)
- 150 ml of water
- 50 ml of soy sauce
Directions
Step 1:
Boil a pan of water.
Off the heat, put the noodles in boiling water. Rice noodles is very fragile, handle with care if you do not want to break it into small pieces.
Do not put the pan back on the fire! Soak the noodles for 7 to 10 minutes, stirring regularly and gently to help them separate. The noodles are cooked when it is completely soft.
Drain the noodles and set aside.
Step 2:
In a bowl, mix all the ingredients of the sauce: first dilute the corn flour (1 tablespoon) with 150 ml of water, then add the soy sauce (50 ml).
Set aside.
Step 3:
Clean and cut the bell peppers in thin strips.

Step 4:
In a frying pan or wok, heat 2 tablespoons of olive oil and fry the bell peppers for 2 minutes over high heat. Add the frozen shrimp.
Continue cooking over low heat (3/10), stirring regularly, until all the liquid has evaporated
Step 5:
Add the sauce made in step 4. Mix.
Continue cooking on low heat (3/10) for 5 to 10 minutes, the sauce will thicken.

It’s up to you now to adjust the amount and seasoning of your sauce: add water and/or soy sauce to your taste.
Step 6:
Just before serving, add noodles and mix with shrimps and bell peppers.
Serve hot.
