A delicious vegetarian cabbage puff pastry… a unique and complete dish for all the family!

Ingredients for 4 persons
• ½ green cabbage (= 400-500 g of cabbage strips)
• 200 ml of water
• 1 teaspoon of salt
• 1 pinch of pepper
• 1 teaspoon of ground coriander
• 4 eggs
• 1 rectangular puff pastry of 230-250 g
• 1 egg yolk
Directions
Step 1:
Remove the first leaves from the cabbage. Rub the cabbage under running water, then cut off the hard base. Cut the cabbage in half, then cut into strips.

Step 2:
Put the cabbage in a large saucepan.
Add a little water (about 200 ml). Add salt, pepper and coriander. Mix.
Put a lid on the pan.
Cook over medium heat (7/10) for 25 minutes. Stir regularly. If necessary, add a little water so that the cabbage can cook and does not stick to the pan.
Step 3: during the cabbage cooking
- Cook the eggs. Boil water and immerse the eggs in it. Cook 10 minutes from boiling.
At the end of cooking, quickly pass the eggs under cold water to remove the shell more easily.
Swab the eggs, then cut into small pieces. Set aside.
- Cut the puff pastry in half. Roll out the puff pastry on a baking sheet covered with parchment paper. Prick the dough with a fork.
- Preheat the oven to 180 ° C / 350 ° F.
Step 4: after 25 minutes of cabbage cooking
Remove the lid from the pan. Continue cooking the cabbage uncovered, increasing the heat and stirring so that the excess water evaporates.
When there is no excess water in the pan, stop cooking.
Add the egg pieces. Mix, then adjust the seasoning with salt.
Step 5:
Place the cabbage and egg mixture on half of the dough, then cover with the other half of the dough.
Press the edges of the puff pastry to close it well.
Brush the puff pastry with egg yolk.
Step 6:
Put it in a hot oven (180 ° C / 350 ° F) and bake for 20 minutes.
Step 7:
Turn off the oven after 25 minutes of cooking.
Open the oven door and wait 10 minutes before removing the puff pastry from the oven for service.
