Parisian Flan without dough

A vanilla-flavored flan without dough, very creamy and easy to make!

Ingredients for 6 persons

  • 750 ml of semi-skimmed milk (low-fat or 2%)
  • 6 eggs
  • 90 g of fine sugar
  • 60 g of corn flour (also known as corn starch or Maïzena)
  • 3 tablespoons of liquid vanilla

Directions

Preheat the oven to 180 ° C / 350 °F

Step 1:

In a saucepan, pour 600 ml of milk and vanilla and heat. Turn off the heat when the milk begins to boil.

Step 2:

In a mixing bowl, pour the rest of the cold milk (150 ml). Add eggs and sugar. Mix.

Then add corn flour and mix until smooth and lump-free.

Step 3:

Pour the warm vanilla milk on the preparation made in step 2. Mix.

Step 4:

Pour all the mixture into the saucepan.

Heat on medium heat (5/10) stirring constantly with a whisk for 6-8 minutes. Remove from heat when the cream has thickened.

Pour into a baking dish.

Step 5:

Bake at 180 ° C / 350 ° F for 40 minutes until a nice golden crust forms on the surface.

If you use an oven with gas rails or electric heaters… Do not put your flan in direct contact with flames or hot coils! To prevent the base of your flan from baking too quickly and burning, put an empty baking sheet between your flan and the flames / hot coils. The heat diffusion will be more homogeneous in your oven.

At the end of cooking, let cool, then cover and refrigerate for several hours. The ideal is to do it the day before and leave it all night in the fridge before eating.
