Chicken Pasta Salad

This healthy, delicious salad is perfect for all your summer meals! Can be made in advance & refrigerated.

Ingredients for 1 person

  • 150 – 200 g of cooked pasta
  • 50 g of raw chicken breast
  • 1 teaspoon of olive oil
  • 1 hard-boiled egg
  • 150 g of cherry tomatoes
  • 25 g of arugula salad ( = rocket)

For the seasoning:

  • 1 tablespoon of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of water
  • Salt and pepper

Directions

Step 1:

Cut the chicken into strips.

In a frying pan, grill the chicken with a teaspoon of oil.

When the chicken pieces are all well grilled, let cool.

Tip: Cook the chicken in large quantities and store in the freezer in ready-to-use small portions.

Step 2:

Cut the hard-boiled egg into slices.

Cut the cherry tomatoes in half.

Step 3:

In a mixing bowl, combine the ingredients for the seasoning. Season with salt and pepper to taste. Set aside.

Step 4:

In a salad bowl, mix all the ingredients: cooked pasta, grilled chicken strips, egg, tomatoes and arugula salad. Mix. Taste your salad and adjust the salt and pepper seasoning if necessary.

Step 5:

Cover your salad with a plastic wrap and refrigerate until ready to serve.
