Chocolate Mousse

Two recipes to choose from for the same result: guaranteed tasty happiness! I propose here a classic version of chocolate mousse and another version 100% vegan.

« Classic » chocolate mousse

Ingredients for 3 persons

  • 3 eggs
  • 100 g of unsweetened chocolate 100% cocoa
  • 60 g of fine sugar. If you opt for a different chocolate with less cocoa, adding sugar may not be necessary. The amount of sugar is to suit your taste (see step 4 of the recipe).
  • 1 pinch of salt

Dark chocolate, milk chocolate or white chocolate. Extra fine chocolate or baking chocolate. With only 20% cocoa or 100%. The choice of chocolate depends on your tastes ….

Baking chocolate is the easiest to use to make a mousse. This one usually contains more cocoa and less milk powder, so it melts better and does not make lumps.

However, if you opt for a 100% vegan version: you have no choice, you have to take a dark chocolate 100% cocoa. Check the list of ingredients: cocoa must be the one and only ingredient.

Directions

Step 1:

Separate the egg yolks and egg whites.

Step 2:

Put the egg whites and the pinch of salt in a mixing bowl.

Using an electric mixer, wisk the egg whites until they form stiff peaks. Set aside.

Step 3:

Break the chocolate into pieces and put in a microwaveable bowl. Add a few drops of water, then heat in the microwave for 30 seconds to melt the chocolate. Mix. You must get a slightly liquid melted chocolate without pieces. If necessary: ​​return to heat a few seconds and / or add a few drops of water.

Step 4:

Add the egg yolks and the sugar with chocolate. Mix. Taste your preparation to make sure the preparation is sweet to your liking. Add a little sugar if necessary.

At the end, pour the chocolate mixture over the egg whites. Mix by stirring all ingredients gently with a spatula; it is important not to whip the mousse to avoid « breaking » the whites. Continue until you have a homogeneous mousse; there should be no sign of whites.

Step 5:

Pour the mousse into the cups that will be used for serving. It will not be possible to transfer the mousse later. Cover with plastic film and put in the fridge. Let the mousse rest for at least 2 hours (curing time).

Take the mousse out of the fridge 15 minutes before eating to reveal all the chocolate aromas.

Vegan chocolate Mousse

Ingredients for 3 persons

  • 150 ml of juice from a can of chickpeas
  • 100 g of unsweetened dark chocolate 100% cocoa
  • 60 g of fine sugar. You can adjust the amount of sugar to your taste (step 3 of the recipe).

Directions

Step 1:

Put the chickpea juice in a mixing bowl.

With an electric mixer, whisk the juice. The mixture begins to whiten, then until they form stiff peaks. Set aside.

Step 2:

Break the chocolate into pieces and put in a microwaveable bowl. Add a few drops of water, then heat in the microwave for 30 seconds to melt the chocolate. Mix. You must get a slightly liquid melted chocolate without pieces. If necessary: return to heat a few seconds and / or add a few drops of water.

Step 3:

Add the sugar with the chocolate. Mix. Taste your preparation to make sure the preparation is sweet to your liking. Add a little sugar if necessary.

At the end, pour the chocolate mixture on the whipped juice. Mix by stirring all ingredients gently with a spatula; it is important not to whip the mousse to avoid « breaking » the whipped juice. Continue until you have a homogeneous mousse; there must be no white marks.

Step 4:

Pour the mousse into the cups that will be used for serving. It will not be possible to transfer the mousse later. Cover with plastic film and put in the fridge. Let the mousse rest for at least 2 hours (curing time).
