Healthy muffins

Want a light snack? Here’s a recipe for muffins without added sugar and no added fat…

Ingredients for 4 persons (8 muffins)

  • 120 g of wheat flour
  • 2 eggs
  • 100 g of fruit compote/fruit sauce (flavor of your choice – the muffins will have the chosen flavor)
  • 100 g of plain yoghurt
  • 1 teaspoon of baking powder
  • 1 pinch of salt

Directions

Preheat oven to 180°C / 375 °F.

Step 1:

Mix the compote and the yoghurt. Add the eggs and a pinch of salt.

Step 2: 

Mix together flour and baking powder. Then gradually add to the previous mixture. When you get a homogeneous mix: your muffin dough is ready.

Step 3:

Place your muffin cups on a baking sheet. Pour the dough into the moulds (about 2 tablespoons per mould)

Bake the muffins for 25 minutes at 180 ° C / 375 ° F

Step 4:

Unmould the muffins. Let cool before serving.

For the greedy: cut the muffins in half and add a thin layer of jam, honey or chocolate spread!
