Pizza folded in half and filled with delicious ingredients: a thick sauce rich in vegetables accompanied by ground beef meat or cheese.
Ingredients for 6 Mini Calzones « beef-vegetables » + 6 Mini Calzones « cheese-vegetables » (4 people)
- 500 g of homemade pizza dough / or ready-to-use pizza dough
- 400 g of chopped tomatoes and their juice (= 1 can)
- 250 g of carrots (gross weight)
- 150 g of onions (gross weight)
- 2 teaspoons of olive oil
- 1 teaspoon of Herbes de Provence (or Italian Seasoning)
- 100 g of ground beef
- 80 g of grated cheese (mozzarella and / or emmental)
- Salt and pepper
- 1 egg yolk
Preheat the oven to 225 ° C / 450 ° F
Cut the onions and carrots into small cubes.
In a frying pan, put 1 teaspoon of olive oil, the pieces of onions, the pieces of carrots and the herbs of Provence. Mix.
Put a lid on the pan, then cook on maximum power for 3-5 minutes, until the pieces of vegetables are lightly colored.
When the onions and carrots are grilled, lower the power of the fire, then add the chopped tomatoes and their juice. Salt and pepper. Mix.
Put a lid on the pan and cook over medium heat (5/10) for 10 minutes.
After 10 minutes of cooking, you get a compote of vegetables, there is no more juice in the pan.
Blend these vegetables with the robot to obtain a thick sauce. Set aside.
In a second pan, heat 1 teaspoon of olive oil and grill the ground beef. Set aside.
Step 5: stuffing preparation
Beef – vegetables: Mix half of the vegetable sauce with the ground beef.
Cheese – vegetables: Mix the other half of the vegetable sauce with the grated cheese.
Roll out the pizza dough. Make sure that the dough does not stick on the work surface: use enough flour to spread it or use baking paper.
Form 12 circles of dough (about 15 cm in diameter); for example, you can use a bowl to have a uniform size.
Place all circles of dough on baking sheets lined with baking paper.
In the center of each circle of dough, put a piece of stuffing (about 2 teaspoons).

To form each calzone: fold the dough on itself to form a half moon, fold the edges and crush them with a fork to solidify the joint.
Poke holes with a fork the top of each calzone; this will prevent the dough from swelling too much during cooking and breaking.
Brush each calzone with a little egg yolk.
Put the calzones in a hot oven (225 ° C / 450 ° F) and cook for 20 minutes.
