Homemade Relish

If you like to add pickles in your sandwiches and salads, this recipe is for you! With this sweet and sour sauce, you will sublimate your hamburgers, sandwiches, salads … and as it is « no added sugar » and « no added fat », you can eat at will!!!

Ingredients for 150 g of relish

  • 100 g of cucumber
  • 50 g of apples
  • 2 tablespoons of white vinegar
  • 1 pinch of turmeric
  • ½ teaspoon of salt
  • 100 ml of water
  • 10 g of corn flour (or Maïzena)

Directions

Step 1:

Peel the skin off the cucumber.

Cut the cucumber lengthwise, then remove the seeds in the centre of the vegetable by scraping with a small spoon.

Step 2:

Peel the apple. Core the apple and cut into chunks.

Step 3:

Roughly blend cucumber and apple pieces with a food processor or blender.

Step 4:

In a saucepan, mix cucumber, apple, white vinegar, turmeric and salt.

Cook over medium heat (5/10) uncovered for 10 minutes, stirring regularly.

Taste the relish and adjust the seasoning if necessary (salt, turmeric).

Step 5:

In a bowl, mix the water and the corn flour.

Add this mixture to the pan.

Continue cooking on low heat (3/10) uncovered. Stir your mixture regularly: it will thicken. Stop cooking after 5 minutes: the mixture will continue to thicken upon cooling.

Step 6:

Pour your relish in a jar and let cool.

Keep this relish in the refrigerator for 10 days.

Eat well chilled.
