To eat hot or cold, whatever the season, this soup will illuminate your table with its beautiful orange color. The carrot sweetness with a slight acidity from the orange have the power to cool you down in the summer and warm you up the winter.
Ingredients for 2 persons
- 400 g of carrots
- ½ beef stock
- 400 ml of cold water
- 50 ml of 100% pure orange juice
- 1 teaspoon of ground coriander
Prepare the carrots: cut the ends, peel and wash with water.
Cut in thick slices.
Prepare for the winter and stock up on fresh vegetables from the garden! Why not freezing a few packets of « ready-to-use » carrot slices for this winter?
In a saucepan, put the pieces of carrot, cold water, ½ cube of beef stock and coriander.
Cover the pan and bring to a boil. When the water begins to boil, reduce the firepower. Continue cooking covered for 20 minutes on low heat (4/10).
After 20 minutes of cooking, remove the pan from the heat.
Blend the contents of the pan (carrots + juice) until you obtain a smooth soup without pieces.
Add the orange juice to the soup. Mix before serving.
