Eggplant gratin with ground beef

A simplified moussaka recipe … and without potatoes to have a low-carb dish.

Ingredients for 4 persons

  • 2 eggplants (800 g)
  • 2 cloves garlic
  • 1 onion
  • 2 tablespoons of olive oil
  • 2 tablespoons of tomato paste
  • 2 tablespoons of paprika
  • 400 g of ground beef
  • 800 g of diced tomatoes and their juice (a large can)
  • Salt and pepper
  • 80 g of grated cheese (Emmental, Swiss cheese …)


Step 1:

Peel, then cut finely the onion and garlic cloves.

Step 2:

Cut off the ends of the eggplants.

Rub the eggplants under water.

Cut the eggplants into cubes.

Step 3:

In a large pan, heat the oil and fry the onion and garlic for 3 minutes over medium heat (7/10).

Step 4:

Add the eggplants. Mix.

Continue cooking for about 5 minutes, stirring regularly.

Step 5:

When the eggplants begin to brown, add the tomato paste, ground beef and paprika. Mix. Continue cooking for 5 minutes.

Step 6:

Add the diced tomatoes and their juice.

Salt and pepper.

Mix. Continue cooking uncovered for about 10 minutes, stirring occasionally. Stop cooking when there is no excess juice in the pan.

Step 7:

Pour the preparation in a gratin dish (2 liters), then sprinkle grated cheese on the top.

Grill in the oven: grill position for 5-10 minutes.

Serve immediately.
