Creamy Curry Cauliflower Soup

This healthy, comforting soup recipe is perfect for chilly days.

Ingredients for 4 persons

  • 1 cauliflower (400 g)
  • 250 g of potatoes
  • 1/2 onion (50 g)
  • 2 cloves garlic
  • 20 g of fresh ginger
  • 1 tablespoon of sunflower oil
  • 1 tablespoon of curry powder
  • Salt and pepper to taste
  • 500 ml of chicken broth
  • 200 ml of coconut milk


Step 1: ingredients preparation


Peel and roughly cut the onion, garlic and ginger


Cut off the base of the cauliflower core, remove the green leaves, then rinse with water.

Cut the cauliflower into large pieces.


Peel the potato, then rinse with water.

Cut into large cubes.

Step 2:

In a large saucepan, heat the vegetable oil.

Over medium high heat, fry the onion, garlic, ginger and curry powder for 2 to 3 minutes.

Step 3:

Add the pieces of cauliflower, potatoes and chicken broth.

Bring to a boil, then lower the heat so as to keep a slight bubbling in the pan.

Cover and simmer for 20 minutes.

Step 4:

Blend the contents of the pan (carrots + juice) until you obtain a smooth soup without pieces.

Step 5:

Add coconut milk. Add salt and pepper to taste.

Reheat if necessary before serving.
