Ingredients for 3 persons (6 large crepes)
For the crepe batter:
- 2 eggs
- 500 ml of semi-skimmed milk
- 2 teaspoons of sunflower oil
- 1 pinch of salt
- 200 g of flour
For the cooking:
- 2 teaspoons of sunflower
Specific material: a non-stick pan (about 25 cm in diameter), paper towel to remove excess oil from the pan, a ladle to pour the batter into the pan, a spatula to flip the crepes.

Directions
Step 1:
In a mixing bowl, break the eggs and beat them into an omelette.
Add milk, oil (2 teaspoons) and salt. Mix.

Step 2:
Add the flour gradually while whipping the preparation to avoid lumps.
Mix until you have a smooth and liquid paste.
Step 3:
Cover the mixing bowl with a plastic film.
Put the crepes batter in the fridge for at least 30 minutes. This rest period reduces the elasticity of gluten: the batter will spread more easily in the pan at the time of cooking.
Step 4:
After 30 minutes, remove the batter from the fridge: the batter has a little thickened because the starch swells with water. Whisk the mixture to obtain a homogeneous mixture again. If the batter is too thick, add a little water or milk.
Step 5:
In a frying pan (25 cm diameter), heat a teaspoon of oil over medium heat, spreading it out with paper towel.
Keep the paper towel soaked in excess oil.
Step 6:
Using a ladle, pour some batter into the pan and spread it out.
Cook for a few minutes over medium heat.
When the first side is cooked, flip and cook the other side for a few minutes.
Place your cooked crepe on a plate.
Wipe your pan with the paper towel soaked in oil. You can add a teaspoon of oil every 3 crepes approximately.
Repeat step 6 until the batter is gone.
Step 7:
Cover the crepes until serving.
If you want to eat hot crepes, you can reheat them in the microwave for 1 minute just before serving.
Step 8:
Garnish your crepes with the ingredients of your choice.
Roll your crepe and enjoy!!!

Suggestion for a balanced dinner:
1 salty crepe with smoked turkey breast (50 g) and mushrooms (100 g)
&
1 sweet crepe with Nutella (2 teaspoons)
