You still have some hummus left over from your last appetizer… use it in this light and fragrant recipe!
Ingredients for 1 person
- 200 g of zucchini
- 2 eggs
- 2 tablespoons of hummus
- 1 tablespoon of olive oil
Wash and cut zucchini in small cubes.
Heat the oil in a pan and fry the zucchini.
While cooking zucchini, beat eggs in omelette. Set aside
When the zucchini are lightly toasted: lower the firepower (3/10) and add the hummus. Mix. Then add the beaten eggs.
Put a lid on the pan and cook on low heat for 5 minutes.
After 5 minutes of cooking: your meal is ready! Mix it one last time and salt if necessary.
