A simple recipe, but so delicious … to accompany your pasta, your meat!
Ingredients for 2 persons
- 600 g of vegetables (gross weight): zucchini, mushrooms and onions
- 1 tablespoon of olive oil
- 1 teaspoon of ground ginger
- 20 to 50 ml of soy sauce (depending on your taste)
- 200 ml of water
Step 1: preparation of vegetables
Zucchini: wash the zucchini and cut the ends. Do not peel the zucchini!
Cut the zucchini into slices.
Zucchini are vegetables that cope with freezing very well. Take the opportunity during the summer to stock up … Wash the zucchini and dry thoroughly. Cut the zucchini into slices or cubes, then put them in freezer bags. You can cook them without thawing.
Mushrooms: Wash the mushrooms with water. Cut mushrooms into strips.
Onion: Peel the onion and cut the ends. Cut in half, remove the sprout, then wash with water. Slice the onion.
In a pan, heat the oil with ginger. Add the vegetables one by one:
- Fry the onion alone for 2 minutes on high heat (8/10)
- Then add the zucchini, mix and cook for 2 minutes
- Add the mushrooms last.
Vegetables should be lightly grilled on the surface.
Reduce the power of the fire (5/10), then add the water and the soy sauce. Mix.
Continue cooking uncovered over medium heat (5/10) for 10 minutes.
Halfway through cooking, adjust the seasoning: add water if the preparation is too salty to your taste or add soy sauce if the preparation is not salty enough to your taste.
After 10 minutes of cooking, your pan-fried vegetables are ready!
