Baked Pattypan Squash with Potatoes

Quick and easy side dish

Ingredients for 2 persons

  • 300 g of pattypan squash (gross weight)
  • 300 g of potatoes
  • 50 g of onion
  • 1 teaspoon of dried thyme
  • Salt
  • Pepper
  • 2 tablespoons of olive oil

Directions

Preheat the oven to 180 ° C / 350 ° F.

Step 1:

• Potatoes

Peel, then wash with water. Cut into pieces.

• Pattypan squash

Cut the ends (stem and peduncle), then rinse well with water because the skin will be eaten.

Cut in half; if there are a lot of seeds inside, which is the case with large pattypan squash, remove the seeds.

Cut into pieces, slightly larger than the potatoes.

• Onion

Peel, then chop or cut finely into dices

Step 2:

In a mixing bowl, put the dices of potatoes, pattypan squash and onions. Add all the other ingredients: thyme, salt, pepper and oil. Mix.

Step 3:

Place on a baking sheet covered with parchment paper; spread in a single layer for even cooking of the ingredients.

Step 4:

Roast in the oven for 15 minutes at 180 ° C / 350 ° F.

After 15 minutes of cooking, mix and continue cooking for 10-15 minutes; stop cooking when all the pieces are golden brown.
